The Boab recipe book is a 44 page resource providing a selection of recipes for cooking and preparing the seedlings of boab trees. The seedlings have a tuber root and edible leaves. The tubers have high levels of iron, potassium, protein and fibre and are low in fat. The leaves are high in vitamins A and C.
